2 pints fresh blueberries, picked over, rinsed, drained
1 cup Pamela’s GF Baking & Pancake Mix
3/4 cup light brown sugar >> 1 tsp. cinnamon
1/2 cup cold butter
Preheat oven to 350F. Grease 8×8 inch baking dish with butter
Sprinkle a pinch or two of some Pamela’s mix onto blueberries and toss to coat.
Pour blueberries into baking dish
In a mixing bowl, combine 1 cup of pancake mix with brown sugar and cinnamon and mix
Add cold butter by hand and rub the mixture between your fingers until it resembles coarse crumbs. Sprinkle crumbs over the blueberries.
Bake in oven until bubbly – about 30 minutes
Serve warm, topped with frozen yogurt or ice cream!
Makes 6 generous servings
This is by far the best thing you’ll ever eat with blueberries!
It’s good with apples and peaches too!
